Steps to make Mango phirni:

  1. Start with soaking the rice overnight. Next day drain water and let it dry. Next add little water and grind the rice into a coarse paste. Next keep milk for boiling. As it reduces malai will be formed, scrape those and add to the milk. Now add the rice paste..
  2. Let it get cooked in slow flame. Gradually it will get thickened. I have used an earthen vessel to cook the phirni. Next take mango pieces, add salt, cardamoms and grind into a smooth puree. Put this puree, for cooking in a pan. Cook till it looses it's rawness. (see tip).
  3. Now add condensed milk and mix. Switch off and let it cool..
  4. By now the phirni base which is slowly getting cooked side by side must have attained the perfect consistency. So switch the flame off..
  5. Next add the cooked mango puree into our warm phirni. Mix well. It gets a nice natural yellow colour. Now the basic mango phirni is ready.. As it cools it sets nicely. It needs garnishing, which adds to it's flavour and taste..
  6. As the mango phirni is set let's garnish it. Take a mango and cut it into thin slices, arrange it like a flower. Garnish with anar dana. And finally add chopped pitachios..
  7. Cool it in fridge. Serve chilled and enjoy....
